Rich Cortland, Lobo & McIntosh Applesauce
Makes: approximately 3 to 4 cups
Ingredients
10 apples, mixed Cortland, Lobo and McIntosh
1 cup fresh apple juice
¼ cup packed brown sugar
2 tbsp lemon juice
2 tsp ground cinnamon
¼ tsp ground nutmeg
Pinch of salt
Instructions
Prepare the apples
Peel, core and roughly chop the apples.
Combine
Place the chopped apples in a large saucepan or pot. Add the fresh apple juice, brown sugar, lemon juice, cinnamon, nutmeg and a pinch of salt. Stir to combine.
Cook
Cover and cook over medium-low heat for 25 to 40 minutes, stirring occasionally, until the apples are completely tender and beginning to fall apart.
Mash
Mash the apples with a potato masher until you reach your preferred consistency.
Reduce
Cook uncovered over low heat for 10 to 20 minutes, stirring frequently, until the applesauce reaches your desired thickness. This also concentrates the fresh apple juice and gives the sauce a richer apple flavour.
Taste and adjust
Taste before adding anything else. If needed, add a little more brown sugar for sweetness, cinnamon for warmth, or lemon juice for brightness.
Cool
Remove from the heat and allow the applesauce to cool. It will thicken a little more as it cools.
