Chia
Scientific Name: Salvia hispanica
Plant Type: Annual
Difficulty: Easy
Seeds Produced Per Plant: Approximately 5,000-15,000+ seeds under favorable growing conditions.
What Is It?
Chia is a flowering member of the mint family grown primarily for its edible seeds. Native to Mexico and Central America, it produces attractive spikes of blue, purple, or white flowers that attract bees and other pollinators.
Historical Uses
Chia was a staple crop of the Aztec and Maya civilizations. The seeds were consumed whole, ground into flour, added to beverages, and used as a valuable trade commodity. Warriors often carried chia as a portable source of energy during long journeys.
Growing Information
Sun Requirements: Full sun (6-8+ hours daily)
Soil Requirements: Well-draining soil
Water Requirements: Moderate
Plant Height: 3-5 ft (90-150 cm)
Spacing: 12-18 inches (30-45 cm)
Germination Time: 7-14 days
Time to Harvest: 100-150 days
Where Should It Be Grown?
✓ Raised Beds
✓ Directly in Garden Soil
✓ Large Containers (minimum 5 gallons)
✓ Community Gardens
Chia grows best in locations with full sun and good drainage.
Wildlife Protection: Generally not required. Deer and rabbits rarely bother mature plants, though young seedlings may occasionally be nibbled and can benefit from temporary protection.
How to Grow
Direct sow after the last spring frost, or start indoors 4-6 weeks before transplanting. Lightly press seeds onto the soil surface and cover with a very thin layer of soil. Keep evenly moist until germination occurs.
Harvesting
Allow flower heads to mature and dry on the plant. Once the seed heads turn brown and papery, cut the stalks and hang them upside down in a dry location.
Gently rub the dried seed heads between your hands or inside a paper bag to release the seeds.
Seed Collection & Storage
Collection Method: Harvest only fully dry flower heads. Remove plant debris and separate seeds from chaff using a fine sieve or by gently winnowing.
Storage Method: Store seeds in a non-bleached paper envelope, amber glass jar, or airtight container in a cool, dark, dry location.
Seed Viability: Approximately 4-5 years when properly stored.
Nutritional Benefits
Chia seeds contain:
• Omega-3 fatty acids
• Protein
• Dietary fiber
• Calcium
• Magnesium
• Phosphorus
• Manganese
• Antioxidants
Additional Benefits
• Excellent pollinator plant
• Drought tolerant once established
• Suitable for small-space gardening
• Attractive ornamental flowers
• Seeds are edible and highly nutritious
• Can be used in baking, puddings, smoothies, and beverages
Interesting Fact
Chia seeds can absorb up to 10-12 times their weight in water, forming a gel-like coating that helps the seed remain hydrated during germination.
